Instructions

Step 1
Heat vegetable oil in a large skillet over medium-high heat. Add cabbage, carrots, mushrooms, green onions, and garlic. Cook, stirring, for 4–5 minutes until vegetables soften.
Step 2
Add bean sprouts, soy sauce, and sesame oil. Stir-fry for another 1–2 minutes. Remove from heat and let cool slightly.
Step 3
Place a spring roll wrapper on a clean work surface with a corner facing you. Spoon 2 tablespoons of filling near the bottom corner. Fold up the bottom, tuck in sides, and roll tightly. Seal the edge with a little water. Repeat with remaining wrappers and filling.
Step 4
Preheat air fryer to 390°F (200°C) for 3 minutes. Lightly brush or spray rolls with oil. Arrange spring rolls in a single layer in the air fryer basket (work in batches if needed).
Step 5
Air fry for 8–10 minutes, turning halfway, until golden and crisp.
Step 6
Meanwhile, make the dipping sauce: In a small saucepan, combine rice vinegar, water, sugar, and sweet chili sauce. Bring to a simmer, stirring to dissolve sugar. Add cornstarch slurry and cook, stirring, until thickened (about 1 minute). Remove from heat and let cool.
